I don’t know about you, but I am always looking for a new and exciting way to make a pork roast. If you are a regular around here, you can probably tell that from a few past recipes. I love the sweet and tangy flavor of my Brown Sugar Balsamic Pork Roast, and the salty sweet flavor of my Parmesan Honey Pork Roast. Sometimes I like to stay more on the savory side too. This recipe for Italian Style Smothered Pork Roast surely fits the bill when we are looking for a good hearty meal that can feed a crowd. The fact that it is also a crock pot recipe is just the icing on the cake … umm pork roast!

Planning a good hearty meal that everyone can enjoy when they are home can be tricky sometimes with our crazy schedules and work hours. I always turn to my crock pot for a helping hand on nights when we are all home at different times for dinner. Setting it up bright and early in the morning, letting it slow cook all day in your favorite spaghetti saucemakes this pork roast so tender and juicy. Serve it up on top of simple al dente Pasta with Garlic Butter Saucefor a great meal anytime.

Here is how we made it …

Ingredients:

  • 4 – 6 pound boneless pork roast
  • 2 medium onions
  • 2 jars of your favorite spaghetti sauce or about 6 cups homemade
  • salt & pepper to taste

Directions:

Peel onions and slice them in half. Place cut side down in the center of your crock pot.

Season the pork roast with salt and pepper, and set on top of the onions. *If you have time, I suggest searing the pork roast on the stove top in a hot skillet with a bit of olive oil on all sides before adding it to your crock pot. This will seal in the juices and add more flavor to your roast.

Pour the spaghetti sauce over the top of your roast.

Cover and cook on low 7 hours (high 4 hours)

*Please note: Crock pot temperatures vary by brand. Use a meat thermometer to check doneness.

The National Pork Board recommends cooking pork chops, roasts, and tenderloin to an internal temperature between 145° F. (medium rare) and160° F. (medium), followed by a 3 minute rest. Since large cuts increase approximately 10° F. while resting, remove them from the heat at 150° F. followed by a 10 minute rest.

Serve on top of pasta or rice. Try serving it with our Pasta with Garlic Butter Sauce, it’s fantastic!
